14 Junior Outlook Calling all children … Would you like to take part in the Christmas Nativity Play at St Mary’s? It’s planned for Sunday 22 December at the 10 am service, but you’ll need to be at Sunday School for rehearsals on 15 December too. Perhaps you’ll be a shepherd, an angel or a wise man, or read out part of the story. It will be fun and you’ll play an important part in our great Christmas celebration of Jesus’s birthday. Katherine Pickthorn Coffee Ice Cream If you’d like a change from Christmas pudding and mince pies on Christmas Day, you might like to try making this delicious coffee ice cream for your family. It’s easy to make. You can make it in advance and keep it in the freezer. This recipe serves six. Ingredients 1 rounded tablespoon instant coffee 4 eggs, separated 4 oz/125g icing sugar, sieved ½ pt /300ml double cream, whipped How to make it Dissolve the instant coffee in 2 tablespoons boiling water and leave to cool. Beat the egg yolks with 1 oz/25g of sieved icing sugar, until the mixture is pale. Stir this yolk mixture into the whipped double cream. Whisk the whites until fairly stiff, then add, spoonful by spoonful, the remaining sieved icing sugar, whisking all the time until you have a stiff meringue. By now, the coffee will be cool, so stir it into the cream and yolk mixture. Fold the meringue mixture into the coffee-flavoured cream, pour this into a plastic container, cover, and freeze until you’re ready to eat it at Christmas.
